Iced Hibiscus Tea with Mixed Berries: A Refreshing Recipe

This vibrant and delicious iced tea is perfect for a warm day, combining the tartness of hibiscus with the sweetness of mixed berries.

Yields: 4 servings Prep time: 10 minutes Chill time: 2-4 hours (or overnight)

Ingredients:

  • 4 cups water
  • 1/4 cup dried hibiscus flowers (or 4-5 hibiscus tea bags)
  • 1/2 cup mixed berries (fresh or frozen – strawberries, blueberries, raspberries, blackberries work well)
  • 2-4 tablespoons honey or maple syrup (or to taste)
  • 1/2 lemon, sliced (optional, for garnish and extra zest)
  • Fresh mint sprigs or rosemary (optional, for garnish)
  • Ice

Instructions:

  1. Brew the Hibiscus Tea: In a saucepan, bring 4 cups of water to a boil. Once boiling, remove from heat and add the dried hibiscus flowers (or tea bags). Stir gently.
  2. Steep: Let the hibiscus steep for 5-10 minutes, depending on how strong you prefer your tea. The longer it steeps, the more intense the flavor and color will be.
  3. Strain: Strain the hibiscus tea into a heatproof pitcher or large jar, discarding the hibiscus flowers/tea bags.
  4. Sweeten: While the tea is still warm, stir in the honey or maple syrup until dissolved. Taste and adjust sweetness to your preference.
  5. Add Berries: Add the mixed berries to the pitcher. If using fresh berries, you can gently muddle some of them to release more juice and flavor.
  6. Chill: Place the pitcher in the refrigerator and chill for at least 2-4 hours, or preferably overnight, to allow the flavors to meld and the tea to become thoroughly cold.
  7. Serve: When ready to serve, fill glasses with ice. Pour the chilled hibiscus berry tea over the ice.
  8. Garnish: Garnish each glass with fresh lemon slices, mint sprigs, or rosemary, if desired. Enjoy!
